Bacon Makes Evertything Better! (Salmon & Bacon Cakes)









 "Bacon" has expanded the definition once again....found this online...Salmon Bacon.  Yeah, you heard me.

It's getting too hot in Upstate NY.  A/C's are running, and it's too hot to use the oven.  I love fish, any time of year, but especially in the summer.  Nothing better than some delicious Salmon and it's porky-best friend, Bacon. I made this the other night, after coming across a recipe for Salmon Cakes on Food Network.  The bacon really brings the flavors up a notch.  Delicious.  I didn't share it, so you'll have to take my word on it.



Salmon & Bacon Cakes
Ingredients
  • 2 strips bacon, cooked until crispy, crumbled, bacon fat reserved
  • 1/4 cup chopped onion
  • 1 egg
  • 1/2 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon sugar
  • 2 tsp lemon juice
  • 1 (14-ounce) can wild salmon, checked for large bones
  • 1 baked or boiled russet potato, peeled, and fluffed with a fork (substitute 3 ½ cups mashed potatoes)
  • 1/4 cup bread crumbs
  • 2 tablespoons grated Parmesan
  • Freshly ground black pepper
  • 1/2 cup vegetable oil
Directions
Heat 1 tablespoon of the reserved bacon fat in a small saute pan over low heat. Add the onions and cook until translucent. Cool the onions for a bit. 

Mix the bacon, onion, egg, mayonnaise, mustard, sugar, and lemon zest in a bowl. Add the salmon and potato, mixing gently after each addition. Form the mixture into 12 small patties. In a shallow dish, combine the bread crumbs, Parmesan, and pepper, to taste. Coat the patties in the bread crumb topping. Heat 1/4 cup of the oil in a large saute pan over medium heat, and cook the salmon cakes in batches until golden, about 3 to 4 minutes per side. Add more oil, as necessary. Arrange on a serving platter and serve

"The only bad part of bacon is that it makes you thirsty. For more Bacon." (Bacon S'Mores)

Memorial Day.  What better way to spend it than camping?  We just got back from Stony Brook Park in Upstate New York.  One of my favorite things about camping is a big campfire and S'mores.  Only one twist....Bacon.  Bacon S'mores.  It's a thing.  It's delicious.  You know you want to try it.

Bacon S’mores

Yield 1 s'more (add each ingredient for extra people)
Prep Time 2 minutes
Cook Time 5 minutes

Ingredients
  • 2 graham cracker halves
  • 1 marshmallow
  • 1 piece bacon, precooked (look in your deli section, next to the not-yet-cooked bacon)
  • 2-3 squares chocolate
Tools
  • Skewers or stick
  • campfire
Method
  1. Precooked bacon is great to use as you can just take a piece of bacon, and place on a graham cracker.  Top it with Chocolate.
  2. Skewer the marshmallow and roast until melted and bubbly. Do this slowly and far from the flames if you want golden brown.
  3. Place the marshmallow on the chocolate, on top of the bacon, and top with remaining graham cracker.
  4. EAT.

You Had Me At Bacon (Bacon Double Chocolate Chip Cookies)

There was a Bake Sale Fundraiser at work this week to raise money for the March of Dimes.  I was in the mood for a chewy, chocolatey cookie (with bacon, of course) so I made this batch of cookies that has a box of cake mix in it (recipe below).  Within 30 minutes of the sale opening, the 4 Dozen cookies I brought in, were gone.  Never Underestimate the Power of Bacon!






Bacon Double Chocolate Chip Cookies

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients:
4-6 slices of  cooked bacon, chopped finely
1 package devil's food cake mix
1/2 cup unsalted butter, softened
1 teaspoon vanilla
2 eggs
1 cup chocolate chips

Cook the Bacon.  Drain on a paper towel, then chop fine.  Set aside
Preheat the oven to 350 degrees Fahrenheit. 
Beat half of the cake mix with the butter, vanilla and eggs until smooth. Add remaining cake mix, the chopped bacon and the chocolate chips. Stir well. Drop dough from a rounded teaspoon onto an un-greased cookie sheet. Bake at 350 degrees Fahrenheit for about 10 minutes.  (Makes about 4 dozen cookies.)
